Ital Stew

What is Ital Stew? Jamaica's Ital Stew truly reflect its motto: Out of Many One People. The dish is made from mainly red peas marinated in rich coconut milk. There is absolutely no meat included in ital stew is it strictly vegan. The added condiments of sweet pepper, onions, scallion, Irish potato, scotch bonnet peppers and fresh thyme makes it a fusion of flavors from the various cultures that populates the area. This is one of Jamaica's traditional vegan dishes which is derives from the Rastafarian culture. Here it is served with callaloo, steam white rice, fry ripe plantains and fresh slice tomatoes. And i will share the recipe for all u to make omg.


Ingredients

1 cup red peas/kidney beans

2 large carrots, dice

3 small Irish potatoes, diced

1 large onion chopped

3 scallion stalks, chopped

1 bay leaf

5 pimento grain

2 sprigs of thyme

4 cloves garlic, crushed

1 can coconut milk

1 hot pepper

salt & black pepper to taste


Spinners Ingredients


1 cup flour

Enough water to bind


Direction


1 places flour in a mixing bowl, mix with hands while adding enough water to bind, making a stiff dough.


2 roll into 1 inched long pieces, drop into boiling stew.


3 cook until they float or add them during last 20 minutes of cooking.



Ital Stew Method


1 wash peas and soak in cold water over night, pour off the water when ready to cook peas.


2 Places coconut milk, bay leaf, pimento grain, ginger, diced garlic and whole hot pepper in the pot.


3 slowly boil and simmer for 1 1/2 hours or until the peas are tender, season by adding the onions, scallion and thyme.


4 add carrots, spinners and potatoes, let simmer for 30 minutes, remove bay leaf and hot pepper before serving.


Served 3 persons
